CHATTANOOGA, TN (WVLT) – It doesn’t matter if you are a sipper, drinker, mixer or none of the above, when you think Tennessee, Whiskey typically comes to mind. But at the Chattanooga Whiskey Company, they’re looking to shake things up a bit.

The company is still in its infancy, but already making a splash.

“Chattanooga Whiskey is the phrase, “rules are good, change them.” it’s acknowledging the past, knowing where you came from and knowing what has been successful and what are keys to great whiskey, but building upon that and hopefully creating your own traditions, said head distiller Grant McCracken.

They’re traditional in some respects. Corn is the main ingredient, it’s barrel-aged in charred white American oak , but they are exploring a bit.

“It’s really just a chance for us to express our style in different ways,” said McCracken.

The batches are small so they can experiment with the malted grains to find different flavors. They’re fermenting differently to see how it affects taste. All the while, not forgetting what bourbon is – but finding out what it can become.

“With traditional bourbon, the barrel is front and center. and we love that, but we thought it would be cool to do some experimentation with the raw materials a little bit more, and the fermentation process a little bit more, to express not only the barrel as one of your ingredients, but those raw material a little bit more and squeeze a little bit more flavor out of those to synergize with the barrel,” said McCracken.

So if Whiskey makes your mouth water, the Chattanooga Whiskey Company may have just what you need.

“It’s looking back and saying, these traditions are great, but can we make tweaks and potentially make it better? and if we don’t try, we’ll never know,” said McCracken.
