Cauliflower Baked Ziti as prepared on News Channel 11 at Noon


The following recipe makes 8 servings.


8 ounces lean ground beef

8 ounces Italian sausage

1 large head cauliflower

1 medium onion, chopped

3 cloves garlic, minced or pressed (optional)

1 jar spaghetti sauce

14 ounce can died tomatoes with basil, garlic and oregano, no salt added, drained

2 Tablespoons tomato paste

1 pinch red pepper flakes (optional)

1 cup ricotta cheese

1 cup Italian blend shredded cheese


Wash cauliflower, cut into bite-sized pieces – Steam for 3 to 5 minutes until cooked al dente – Drain well

In a large skillet, brown ground beef and Italian sausage – Drain excess fat

Add onions and garlic – Cook until onions are soft

Stir in tomato paste and drained diced tomatoes

Add spaghetti sauce – Mix thoroughly

Add red pepper flakes

Spread cauliflower in 9×13 pan – Add sauce and mix well

Top with ricotta – Top with Italian blend cheese

Bake at 350 degrees for about 30 minutes – until sauce is bubbly and cheese starts to brown

Serve with colorful vegetables or salad.
